Our obsession with slow and low-smoked protein grew into something much bigger than we expected. What started as a passion became a discipline. We follow the Texan tradition of smoking, where time is the most important ingredient on any menu. Our custom-built reverse flowsmokers circulate heat and smoke with real precision, wrapping every cut of protein in layers of flavour that no oven, grill pan, or shortcut can ever replicate.
